I have to share my latest obsession with you!
Getting our daily intake of greens can be a challenge - even on our most determined days. I mean, you can only eat so many salads, right?!? And sautéed spinach every night gets pretty old. And so do kale chips…
I’ve never been a huge smoothie fan because of the sugar content. And I have definitely never been a green smoothie fan because of the taste. Until now!
Here’s how it started…
A couple of weeks ago I had an unexpected oral surgery that required me to be on a liquid diet for three days, then a soft diet for several days after that.
Those of you that have known me for any length of time know that nutrition is very important to me. Eating wholesome, nutritious, non-refined, organic, straight from nature foods helps me reduce my risk of cancer recurrence, maintain my energy and physique, and just makes me feel good!
So… what other option did I have, but to dive into the smoothie world?!?
And now, beautiful friends, I have a new craving…
A Delicious Green Smoothie!
I wish I could take full credit for this scrumptious delight, however, it is NOT my recipe. It came straight out of the Vitamix Recipe book. It is so delicious and good for you that I couldn’t keep it to myself! My entire family loves it and asks me to make it (or share my own) on a regular basis. Even my daughter who despises spinach!
I am completely healed from my surgery and I still make this smoothie daily. It has made it so much easier for me to add a healthy dose of greens to my mostly plant-based diet. And, I am 100% confident it will do the same for you if you give it a try!
Here’s the recipe for this GOING GREEN SMOOTHIE goodness:
1/2C water (depending on your preferred consistency)
1C green grapes
1/2C pineapple chunks
1/2 medium banana, peeled
2C Spinach
1/2C ice cubes
Put ingredients in the blender ( I use a Vitamix) in the order listed and blend until smooth!
*If using frozen pineapple, omit the ice cubes
Personal Alterations:
I buy organic fruit, then, wash what needs to be washed and slice what needs to be sliced. Next, I lay the fruit on cooling racks placed on baking sheets and put the baking sheets in the freezer for about 4 hours. Then, I place the fresh, frozen fruit in individual freezer bags.
You could pre-measure the ingredients and combine them in bags for individual smoothies, too!
In order to keep the consistency the way I like it, I add 1 1/4 C water with the frozen fruit and spinach and omit the ice.
